WIAW + a Life Update

Happy Wednesday! Now that school is officially in full swing, I will probably be making more simple foods and not as many extravagant recipes. That’s just what happens when you have limited time to cook/eat. This semester is going to be especially crazy for me because I have to take a National Boards Exam (part 1) before January. So today I want to share with you the foods that I eat when I have a crazy schedule. They all take little to no preparation, have little clean up, and are super healthy!
You really cant beat that!
Also random, but I am currently writing this post from my desk bike which has inspired me to do a post on how to add more activity to your daily life. I have been learning more about the benefits of living an active lifestyle vs just “working out” and want to share some information with you all!
7:20 a.m. before class: Oatmeal! In order to cut down on prep time (and since I dont have a microwave), I just bowl some hot water on the stovetop and pour it over a combo of oats, chia seeds, cinnamon, and a little bit (about half scoop) of vanilla protein powder. Then I topped it with some almond milk (because I make the oats super thick!), frozen berries, and some sliced banana! This was so delicious and filling and kept me energized until my lunch break.
Lunch time: 12:15 – Big smoothie bowl! 2 frozen bananas, 2 cups frozen bluebrries, almond milk, kale, vanilla protein powder went into the blender. This was then topped with some frozen strawbs and blackberries, and some shredded coconut and sliced banana!
Dinner time: 6:30 Baked oil-free crispy fries with makeshift guac dip! (want to know how to make them? – No worries I will do a post soon – plus show you some better photos!). Don’t worry that was only all I could fit in this cute little dish. I ate one huge russet potato worth along with lots of fresh cut carrot sticks and my garlicky avocado dip. It was so deliciously amazing. I am still dreaming about these fries.
That rounded out my day of eating. I don’t have much time to have snacks (nor am I allowed to while in clinic or the lab) so I have to eat larger meals to keep me full throughout the day.
