Top Vegan School/Work Week Lunches
School already??? A lot of people that I know have already started classes. I am getting ready to officially start dental school on Monday and know that I will be doing a lot of meal prep so that I have quick, easy lunches that I can come home to on my lunch break and not have to worry about cooking anything. I make a lot of salad-type dishes that keep vey well in the refrigerator, making them great for work or school! They can be packed into tupperware easily and all taste delicious! I am sharing some of my personal favorite recipes that I will be eating lots of this year.

Note: Some vegans choose not to eat honey- so just omit that if you do! I have made it without honey more times than not and I like it better that way!

Numero 3. Black Bean Tomato-Corn Salad
Can you tell that I really like mexican-inspired lunch dishes? It’s actually kind of strange because I don’t like going out for mexican food, and am not a huge fan of tacos. However, I love mexican style quinoa salads, veggie salads, and soups.

4. Typically eaten as a breakfast food, but I love it any time of day! Breakfast, lunch, or dinner- oatmeal never fails to disappoint! Here are some of my favorite oatmeal recipes:
