Slow Cooker Pork Roast Dinner

Slow Cooker Pork Roast serve with a side salad and a baked sweet potato!

There was a time in my life where I didn’t eat pork at all- boy was I missing out! Cooking pork correctly makes all the difference! I love making pork roasts in the crock pot or grilling pork chops outside on the grill. Pork is often considered the other “white meat” and is lower in fat than other darker meats.

I  know I’ve said it a million times- but boy do I love cooking meals int he crock pot! All you need to do for this pork roast is mix together a dry spice rub and add it to the roast. Then you can walk away for about 6 hours!

Ingredients:

1 Pork roast

Rub:

1 teaspoon Garlic Powder

1 teas Onion Powder

1/2 teaspoon sea salt

1/2 teaspoon cracked black pepper

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon oreganocarmelized

Directions:

Mix together all of the spices in a bowl and then rub it into your roast! Super easy! Hardly any preparation at all! I love making my own rubs/ spice mixes for dishes vs. using pre-made ones from the store. They are often loaded with excess sugars, ingredients, and corn syrup! Yuck! Even those little taco seasoning packets have added sugar in them. Maybe It’s just me, but if I wouldn’t add corn syrup to my own seasoning mixes, I am certainly not going to buy one! This rub uses common spices that most people have in their home on hand.

Sides:

I paired this roast with a baked sweet potato and a salad. The baked sweet potato was made by baking in the oven for about 1 hour on 425 degrees. Make sure to poke holes in your potato before putting it in the oven to get the caramelized effect! I will never go back to microwaving sweet potatoes again. This tasted 100x better! The side salad had spring mix, cucumber, yellow tomato, red bell pepper, and artichoke hearts with an oil and vinegar dressing.
