Pomegranate Avocado Lentil Salad
It’s pomegranate season folks! You know what that means right? Stained fingers, magenta juice splatters on the kitchen walls, and pomegranate seeds all over your floor. Oh, and delicious recipes. Can’t forget about those. I made a lentil dish a couple weeks ago with pomegranate seeds, avocado, and apple and am finally getting around to posting it!
I had actually never had lentils before making this recipe. I bought a bag at the store the other day for $1 so needless to say there will be more lentil recipes in my future. Lentils are a great source of plant protein, have lots of fiber, and are fat-free/low-fat. If you don’t know by now, I am probably the most frugal 22 year old you will ever meet, so at $1 a bag, lentils have become a pantry staple for me.
Let’s get into the recipe:
1 cup cooked green lentils
2 pomegranates, seeded
2 small/1 large golden delicious apple
1 avocado
1 small orange, juiced (about 4-5 tbsp)
1-2 tsp fresh minced ginger (depending on desired ginger taste)
1 tbsp fresh mint leaves minced/chopped

Directions: Cook the lentils according to the package and put them in a bowl. Chop the apples and avocado into chunks and add it to the bowl. Then de-seed the pomegranates and add those to the dish. Add the juice of a small orange to the dish along with the fresh minced ginger and mint leaves. Mix everything up, chill in the fridge for a while, and enjoy! Easy as pie!
