PB-Honey Drizzle Banana Bread Oat Bars
Banana Bread Oat Bars with a Honey-PB drizzle!
I get so excited when I make a new recipe from scratch and it works out so well! I had some super ripe bananas laying on my counter and knew I wanted to make some sort of a breakfast/ snack bar. These were perfectly soft, a little chewy and very filling! You can eat these for breakfast, a snack, pre-workout, dessert- anytime really! Ripe bananas really help to naturally sweeten recipes so you don’t need as much other sweetener. These are also gluten free and can be made vegan by replacing the honey with agave nectar.
You Will need:
3 medium/large extra ripe bananas (we’re talkin almost fully brown)
3 cups gluten free oats (can use regular)
2 tablespoons coconut oil
1/4 cup coconut butter
1/3 cup honey (agave if vegan)
1/2 cup unsweetened applesauce
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon (I love cinnamon-but you could probably just use 1 teaspoon)
2 teaspoons vanilla extract
1 tablespoon ground flax
Directions:
Preheat oven to 350 degrees.
I used my Ninja food processor and dumped all of the ingredients in and simply blended it all together. I love using my Ninja because all I have to do is add all of the ingredients and press a button and it does all of the work for me! If you do not have a food processor or a Ninja, you can do this by hand as well. First mash the bananas well. Then add the applesauce, honey, coconut oil, coconut butter, vanilla extract and mix well. Then add the oats, flax seed, salt, baking powder, and baking soda to the bowl and mix very well. You can use an electric mixer or a Kitchenaid stand up mixer. You will get a little bit of an arm workout in if you mix it all together by hand!
Next, spray a glass baking dish with non-stick spray as these tend to stick to the pan. Then pour the oat bar mixture into the pan, spread it out evenly and bake it for about 20 minutes. You may need to adjust cooking times so keep an eye on it!
When they come out of the oven, I added a honey- PB swirl. I used about 2 tablespoons total of White Chocolate Wonderful PB company peanut butter and natural honey.
