Banana Bread S’mores Bars (Semi-Healthy)

I made these for my family when I was home over spring break. I was super bored and avoiding all of the school work I needed to do, so I decided to experiment in the kitchen. My brothers usually don’t like to try any of my healthy baking experiments, so I decided to make these semi healthy.  I did not use any butter, flour, hydrogenated oil, or white sugar. They were also egg free. I did however add marshmallows, graham crackers crumbs, and brown sugar, which I normally would not use when baking for myself (gluten + sugar= a no-go for me in my daily life).

My family all really enjoyed these. They are much healthier than anything that you would buy at the store. The texture turned out great! They were fluffy and soft, yet fairly dense at the same time.

Ingredients:

2 Ripe Bananas – We’re talking lots of brown spots!

1/2 cup unsweetened apple sauce

1/4 cup coconut milk

1/3 cup melted coconut oil

2 cups oats

1/2 cup graham cracker crumbs

3/4-1 cup mini marshmallows (I didn’t measure these exactly)

3 sheets of graham crackers (cinnamon flavor)

1 teaspoon cinnamon

1/2 cup brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

Directions:

I used a Ninja to make these bars. It is my favorite way to make any sort of baked good, spread, mix, etc. It is so simple and requires little clean up! You could use a mixer if you don’t have a Ninja or Vitamix, or high powered blender of the sort. If you do have a Ninja, peel and add the bananas, oats, applesauce, baking powder, baking soda, graham cracker crumbs, coconut milk, cinnamon, and brown sugar to the container. Then, just plug it in and turn it on and wait for it to be well incorporated! Then, melt the coconut oil in the microwave for about 1 minute and add it to the container as well. Mix it all up again until well incorporated. If you are using a mixer, you can follow these same steps, but you will probably want to mash up the bananas first before turning on the mixer.

Next, pour the mixture into a 9 x 11 baking dish. Don’t forget to grease the pan with cooking spray! Then, break up the three sheets of graham crackers into pieces and scatter them across the top. Then, spread some marshmallows to the top as well. I love how the marshmallows came out all toasted- it looked like they were actually put over a fire making s’mores! You could add chocolate chips to the top if you so desire to make them more like a s’more. We did not have any on hand in my house, but I bet they would make a great addition!
